Cod fish soup with ILIADA Single Estate Extra Virgin Olive Oil and saffron

Ingredients 

• 1kg fresh cod fish
• 2,5L of cold water
• 1 garlic clove
• 2 carrots, peeled and chopped in thick pieces
• 2 big potatoes, peeled and chopped in thick pieces
• 1 oregano stick
• 1 bay leaf
• 5-6 pepper corns
• 1 leek, peeled and chopped in thick pieces
• Lemon juice, of 1 lemon
• 2 onions, peeled and chopped in thick pieces
• 10g saffron in threads
• 90 ml ILIADA Single Estate Extra Virgin Olive Oil
• Salt & fresh pepper
